Executive Chef Jimmy Øien

Taste of mountains and high quality

Jimmy Øien is the former head chef and founder of the restaurant Rest in Oslo – awarded the Michelin Green Star for sustainable gastronomy and named Young Chef 2022 in the Michelin Guide.
With Rest, he challenged the culinary industry through his uncompromising focus on using whole animals, unconventional ingredients, and deep respect for nature’s resources.


At the beginning of 2025, Jimmy took over as Executive Chef at Gausta and now oversees seven dining venues across the destination. At Gausta, he continues to uphold his philosophy: food should be honest, locally rooted, and inspired by Norwegian tradition. He often uses ingredients sourced from the surrounding mountains and nature – believing that the best flavors are often found right outside the door.

Star Chefs to Gaustablikk

The concept Star Chefs at Gausta is led by our very own Executive Chef, Jimmy Øien – known for his pioneering work in sustainability and gastronomy. Jimmy handpicks some of Scandinavia’s finest chefs to visit Gaustablikk for exclusive takeovers and unique culinary experiences in the mountains.


Through Star Chefs at Gausta, he aims to create evenings where the mountains meet Michelin – where passion, creativity, and raw nature come together.

Koizen - Alven & John Chu

Koizen is featured in the Michelin Guide for its omakase-style sushi in Gothenburg.


The restaurant is run by Alven Chu (trained in the USA and Japan) and his father John, focusing on honest sushi crafted with high precision.

Frida Ronge

White Guide Rising Star of the Year, 2014
Author of “Nordisk Sushi/Rå som sushi” and “Food Retreat”.

Daniel Höglander

Was co-owner and head chef of the restaurant Aloë, awarded two Michelin stars.


Also participated in the Swedish TV competition Kockarnas kamp (Chef’s Battle).

Thomas Sjögren

Named Chef of the Year in Sweden 2015, the youngest ever to receive the title.

Also won the popular TV competition Kockarnas kamp in 2018.

Marcus Jernmark

Represented Sweden at the Swedish Embassy in New York, preparing food for a diplomatic audience.

Former Executive Chef at the two-star Michelin restaurant Frantzén in Stockholm.

René Mammen

Founder and owner of Restaurant Substans in Aarhus. Runs several restaurants together with his wife.Restaurant Substans received one Michelin star in 2015.

Runa Kvendseth

Winner of two gold medals in the Norwegian Culinary Cup, silver in the Norwegian Championship of Culinary Arts, bronze with the junior national team at the World Cup 2018, and bronze + sustainability award in Chef of the Year 2021.
