Jimmy Øien was previously head chef and founder of Rest in Oslo – awarded the Michelin Green Star for sustainable practices and named Young Chef 2022 in the Michelin Guide.
With Rest, he challenged the restaurant industry by highlighting whole animals, “imperfect” ingredients, and local resources that often went unused.

 His philosophy was simple yet powerful: to cook with respect for nature and prove that sustainability and quality go hand in hand.
Now, he brings that same mindset to the mountains.
